Enjoy This! Our Salsa Recipe From Texas

After living in Texas for 16 years, we picked up a lot of recipes. Here is our Salsa Recipe, to be made from scratch with all fresh ingredients. Goes well with our Guacamole recipe from last week. Invite some neighbors over this week and serve these with tortilla chips as an appetizer!

Ingredients
4 ripe tomatoes, diced (Roma or straight off the vine suggested)
1/4 red onion, chopped (more if it is a small onion; we usually add more to taste)
1 jalapeno, minced and seeded (keep seeds if you want it hot)
8 cilantro sprigs, chopped
3 garlic cloves, minced
Juice of 1 fresh lime
olive oil to taste (Approx 1 Tablespoon)
1/2 teaspoon salt

Dice up all of your veggies. Then add them all together. I give it a good eyeball to see if it might need more red onion or more cilantro. I love the sweetness of the red onion and the freshness of the cilantro. Personally, I can’t get quite enough cilantro.

Sprinkle a bit of olive oil on the top (maybe a Tablespoon) to give it a bit of a velvety texture. Let it rest for 15 minutes or so and then serve it up! I serve it with an authentic Mexican tortilla chip, such as Xochitl. Salsa without a good chip is a waste of a good salsa!

The great thing about this salsa is you add the veggies to your liking. So take a big scoop and then add additional ingredients as needed.
